Black rice with zucchini

Nutritious meal for two in the company of whole grain tahini sauce.

for vegetables:

  • 2 small zucchini
  • 1 eggplant
  • 1 tablespoon olive oil
  • pinch of salt
  • fresh dill

for rice:

  • 250 g black rice (found in organic stores)
  • pinch of salt

for the sauce:

  • 3-4 tablespoons whole grain tahini
  • water dilution
  • 1/2 lemon

Cut the aubergine and courgettes into thin strips and brush pan with a spoon of olive oil. Add a little salt and cook until soft. If necessary, add a little water. Pour into a bowl and sprinkle with fresh dill.

Cook rice according to package instruction in salted water. At this time you can prepare the sauce. Mix in a blender with a few tablespoons of tahini and lemon juice as desired water density. Melee to fine mixture.

Put all ingredients in a large bowl and eat while warm.
