Sandwich with mushrooms and corn

It is very difficult to find out suitable sandwiches, but why not make at home?

  • 4-5 slices of bread
  • 1/2 jar of canned tomatoes and peppers (I use home)
  • 1 tin of sweetcorn
  • 1 stalk leek
  • 200 g mushrooms, mushroom
  • 3-4 tablespoons olive oil
  • for the pesto:
  • 5-6 leaves of sorrel
  • 1/2 avocado
  • 1/2 leek
  • 1/2 lemon
  • 1 tablespoon olive oil
  • 2 tomatoes
  • pinch of salt

You can prepare the filling for sandwiches cut into wholesale peppers and tomatoes, mushrooms, leeks and mix with corn. Brush bread with olive oil and pour the mixture. Bake in moderate oven for 15-20 minutes.

For pesto grind all ingredients in a blender for 2-3 minutes.

You can combine with warm vegetable soup.
