Salad with cashews

The good thing about raw food diet is a choice for easy salad is practically unlimited. In this recipe interesting detail is cashew dressing. It is advisable to soak the nuts for a few hours in advance.

  • 2 heads white radish
  • 1 large cucumber
  • White onion 1 head
  • 2 tomatoes
  • 1 small lettuce
  • 1 small head of broccoli
  • For the dressing:
  • 100 g raw cashews
  • 50 ml lukewarm water
  • 1-2 tablespoons olive oil
  • salt to taste

Clean and chop the vegetables in a big bowl. If you tolerate raw broccoli can be steamed it until tender.

Blend cashews with water and oil in a blender and grind until a fine mixture. If necessary add more water. You can add salt or dressing directly over vegetables.

Pour the dressing and mix.

Enjoy your meal!
