Grilled zucchini with green salad and tofu.
- 2 courgettes
- 2-3 tablespoons green pesto
- 200 g rhubarb
- 100 g smoked tofu
- 1 small head of celery
- 1 tsp pumpkin oil
- 4-5 large olives
Grilled courgettes grilled until golden.
Prepare salad as fresh cut celery and rhubarb, add the tofu and olive oil.
Arrange on a plate with a few tablespoons of pesto with zucchini.
