Colorful salad with ginger-cashew pesto

A beautiful salad with creamy cashew dressing / pesto.

  • mix of leafy green plants (green and red lettuce, arugula, parsley, etc.)
  • mix of sprouts optional
  • olives sliced
  • cherry tomatoes
  • black sesame seeds (optional)
  • for the pesto:
  • washed and soaked raw cashews
  • pinch of salt
  • root ginger (or powder)
  • olive oil or sesame oil

Prepare the pesto by mixing all ingredients in a blender and whip with a little water to make a creamy mixture. Mix in a deep bowl and optionally seasoned with a little salt and lemon juice.
