A beautiful salad with creamy cashew dressing / pesto.
- mix of leafy green plants (green and red lettuce, arugula, parsley, etc.)
- mix of sprouts optional
- olives sliced
- cherry tomatoes
- black sesame seeds (optional)
- for the pesto:
- washed and soaked raw cashews
- pinch of salt
- root ginger (or powder)
- olive oil or sesame oil
Prepare the pesto by mixing all ingredients in a blender and whip with a little water to make a creamy mixture. Mix in a deep bowl and optionally seasoned with a little salt and lemon juice.
