Quinoa with red lentils and vegetables

A wonderful warm or cold salad that could easily pass for a light dinner or lunch in the office.

  • 1 part cooked quinoa
  • 1 part boiled red lentils
  • raw red pepper
  • cucumber
  • fresh green onions
  • fresh basil
  • salt if desired
  • lemon juice for flavoring
  • olive oil if desired

Mix all ingredients, chop vegetables very finely. Sprinkle with plenty of lemon juice.
